Frequently asked questions

What does a feeding ratio like 1:5:5 mean?
Parts by weight of starter : flour : water. 1:5:5 means for every 1g of existing starter, add 5g flour and 5g water. A higher ratio (like 1:10:10) means more food relative to starter, which slows fermentation — useful for a longer window between feeds.
Does this account for my starter's current hydration?
It assumes your starter is at a steady state matching your usual feed ratio's hydration, which is true for most maintained starters. If you've just changed your feeding ratio, the first feed or two won't be exact until it settles back to steady state.
